The Origin & Sourcing Grown at high altitudes of 1,400 to 1,900 meters in the volcanic mountain soils of Chiapas, Mexico. Traditional smallholder farming families hand-pick ripe cherries, which are fully washed using pure mountain water and sun-dried on open-air patios. We roast each small batch to a balanced medium, then immediately grind and nitrogen-flush seal each pod to protect peak aromatics and flavor.
